Winemaking
Destemming. Cold maceration for 10 days at 4–12°C. Fermentation of uncrushed grapes with wild yeasts (pied de cuve) in open vats, with regular manual punch-down of the cap. Malolactic fermentation in barriques. Aged for 25 months in barriques, 25% new oak.
Aging potential
Great potential.
